Ingredients
  

  • 2 cups broccoli florets
  • 1 cup sliced bell peppers any color
  • 1 cup sliced onion
  • 1 cup sliced mushrooms
  • 1 cup sliced zucchini
  • 1 tsp sesame oil
  • 1 clove garlic minced
  • 2 tbsp soy sauce
  • 2 tsp honey
  • 1 tsp rice vinegar

Instructions
 

  • Heat a wok or large frying pan over high heat. Add the sesame oil and let it heat up for a minute.
  • Add the garlic and stir-fry for 30 seconds until fragrant.
  • Add the broccoli, bell peppers, onion, mushrooms, and zucchini to the pan. Stir-fry the vegetables for 3-4 minutes until they are just starting to soften.
  • In a small bowl, mix together the soy sauce, honey, and rice vinegar. Pour the sauce over the vegetables and stir to coat.
  • Continue to stir-fry the vegetables until they are tender but still slightly crisp, about 3-4 more minutes.
  • Serve the hibachi vegetables hot, garnished with sesame seeds if desired. Enjoy!

Notes

You can also add other vegetables to the mix, such as carrots, bok choy, or bean sprouts. If you’d like a little more protein, you can also add some cooked chicken, beef, or tofu to the vegetables.
