Need a quick and easy meal that is sure to satisfy your cravings? This Easy Fried Rice is the perfect recipe for you! Made with simple ingredients like cooked white rice, frozen peas and carrots, onion, garlic, eggs, soy sauce, and sesame oil, this fried rice is easy to prepare and full of flavor. Simply cook the vegetables, scramble the eggs, and stir in the rice and seasonings. Serve hot and enjoy!

Ingredients
  

  • 2 cups cooked white rice
  • 2 tbsp vegetable oil
  • 1 cup frozen peas and carrots thawed
  • 1 small onion diced
  • 1 clove garlic minced
  • 2 eggs beaten
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 green onion thinly sliced (optional)

Instructions
 

  • Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the peas and carrots, onion, and garlic, and cook until the vegetables are tender, about 5-7 minutes.
  • Push the vegetables to the side of the skillet and add the beaten eggs to the empty space. Scramble the eggs until they are cooked through.
  • Add the cooked rice to the skillet and stir to combine. Stir in the soy sauce and sesame oil.
  • Cook for an additional 2-3 minutes, or until the rice is heated through. Garnish with sliced green onion, if desired. Serve hot and enjoy!

Notes

You can add some diced cooked chicken, beef, pork, or shrimp to the fried rice for a protein boost.
For some extra flavor, try adding some diced bell peppers, sliced mushrooms, or chopped broccoli to the fried rice.
