Equipment

  • 1 5 gallon food grade bucket with gas lock/bubbler

Ingredients
  

  • 12 lbs unprocessed honey
  • 5 gallons spring water
  • 2 packets dry yeast
  • 2 tsp yeast nutrient

Instructions
 

  • Heat 2 gallons of spring water to 160F in a pot then remove from heat
  • Add yeast nutrient and 12lbs honey, stir until dissolved
  • Bring back to temperature and maintain for 30 mins
  • Skim any foam that forms then remove from heat and let cool. Add remaining water to mix
  • Transfer must to 5 gallon bucket or other fermentation chamber and shake for 5 mins
  • Place lid and gas lock and store in a cool dark place for 2-4 weeks
  • Rack into secondary fermentation chamber after this time is desired, or bottle mead at this point.
