Ingredients
  

Salad

  • 2 cups mixed greens
  • 1 cup cooked chickpeas
  • 1/2 avocado diced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup diced cucumber
  • 1/4 cup diced red onion

Dressing

  • 1/2 cup plain Greek yogurt
  • 1/2 cup packed fresh basil leaves
  • 1/4 cup packed fresh parsley leaves
  • 2 tbsp lemon juice
  • 2 cloves garlic
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions
 

  • In a large bowl, combine the mixed greens, chickpeas, avocado, cherry tomatoes, cucumber, and red onion.
  • To make the dressing, add the Greek yogurt, basil, parsley, lemon juice, garlic, salt, and pepper to a blender or food processor. Blend until smooth. With the motor running, slowly drizzle in the olive oil.
  • Pour the dressing over the salad and toss to combine. Serve immediately and enjoy!

Notes

You can add some grilled chicken or salmon to the salad to make it a more substantial meal.
For some added crunch, try adding some croutons or toasted nuts to the salad.
