Traditional Mead

Equipment
- 1 5 gallon food grade bucket with gas lock/bubbler
Ingredients
- 12 lbs unprocessed honey
- 5 gallons spring water
- 2 packets dry yeast
- 2 tsp yeast nutrient
Instructions
- Heat 2 gallons of spring water to 160F in a pot then remove from heat
- Add yeast nutrient and 12lbs honey, stir until dissolved
- Bring back to temperature and maintain for 30 mins
- Skim any foam that forms then remove from heat and let cool. Add remaining water to mix
- Transfer must to 5 gallon bucket or other fermentation chamber and shake for 5 mins
- Place lid and gas lock and store in a cool dark place for 2-4 weeks
- Rack into secondary fermentation chamber after this time is desired, or bottle mead at this point.
