Beat eggs, oil, sugar, vanilla, and zucchini until well blended
3 Eggs, 1 cup Oil, 1½ cups Sugar, 1 tsp Vanilla, 2 cups Grated zucchini
In separate bowl mix flour, baking soda, baking powder, salt, cinnamon, and ½ cup of the nuts and blend well
3 cups Flour, 1 tsp Baking Soda, ½ tsp Baking Powder, ¼ tsp Salt, 2 tsp Cinnamon, 1 cup Chopped Pecans
Add dry ingredients to zucchini mixture, do not over mix.
Pour batter into 2 greased and floured loaf pans. Sprinkle the other half cup of nuts on top of loaves.
Bake at 350° for 50 minutes or until toothpick inserted comes out clean.
