Zucchini Bread

A quick bread is a bread that is made out of zucchini and is extremely beautiful and delicious. It is also very fast and easy to make.

Ingredients
  

  • 3 Eggs
  • 1 cup Oil
  • cups Sugar
  • 1 tsp Vanilla
  • 2 cups Grated zucchini
  • 3 cups Flour
  • 1 tsp Baking Soda
  • ½ tsp Baking Powder
  • ¼ tsp Salt
  • 2 tsp Cinnamon
  • 1 cup Chopped Pecans optional

Instructions
 

  • Beat eggs, oil, sugar, vanilla, and zucchini until well blended
    3 Eggs, 1 cup Oil, 1½ cups Sugar, 1 tsp Vanilla, 2 cups Grated zucchini
  • In separate bowl mix flour, baking soda, baking powder, salt, cinnamon, and ½ cup of the nuts and blend well
    3 cups Flour, 1 tsp Baking Soda, ½ tsp Baking Powder, ¼ tsp Salt, 2 tsp Cinnamon, 1 cup Chopped Pecans
  • Add dry ingredients to zucchini mixture, do not over mix.
  • Pour batter into 2 greased and floured loaf pans. Sprinkle the other half cup of nuts on top of loaves.
  • Bake at 350° for 50 minutes or until toothpick inserted comes out clean.
